Fans of Japanese cuisine have a date on Antwerp’s Eilandje this summer. From 20 to 23 August 2026, Zuru Zuru Ramen from Ghent and HIRO izakaya in Antwerp join forces for an exclusive culinary collaboration. For four days, chef Nick Hofman’s iconic Spicy Miso Ramen takes centre stage, paired with HIRO’s authentic yakitori.

A Unique Collaboration Between Two Japanese Specialists

Over the past few years, Zuru Zuru Ramen has become a go-to spot for lovers of authentic ramen. Chef Nick Hofman regularly travels to Japan to deepen his knowledge of traditional ramen and yakitori techniques. For this special event, he’s focusing entirely on his renowned Spicy Miso Ramen, while the HIRO team takes care of the yakitori.

At HIRO, the skewers are grilled on a traditional shichirin, a Japanese charcoal grill using premium binchotan charcoal. This method gives the meat a subtle smoky flavour and a crisp exterior while keeping it beautifully juicy inside.

The Spicy Miso Ramen Steals the Show

The star of this collaboration is, without a doubt, Zuru Zuru’s Spicy Miso Ramen. The bowl is built around a tonkotsu broth simmered for 18 hours from pork bones. That creamy base is enriched with a blend of white and red miso, a house-made taré, and a fiery rayu chili oil.

The noodles are freshly made in-house using organic flour from Oudenaarde. Topped with slow-braised pork belly chashu and a marinated ajitamago egg, this ramen bowl perfectly balances rich umami, smooth miso, and a gentle kick of spice.

About HIRO Izakaya

HIRO opened its doors in March 2024 on Antwerp’s Napoleonkaai. Run by Bart Huybrechts and Thomas Van de Weyer, the izakaya has already earned a solid 13.5/20 in the Gault&Millau guide.

Beyond sushi and classic izakaya dishes, HIRO is known for its relaxed atmosphere. No stiff fine dining, just a cosy spot where friends gather to enjoy quality Japanese food and sake.
